Bottling Grand Cru, brewing Mead

Grand Cru bottling is complete. I fell behind early trying to get the "Grolsch" style ceramic caps on the 16oz bottles, but caught up when I figured that out. All of the bottling gear is now cleaned and rinsed.
The Yeast is doing yeast-like things and expanding. We are waiting on it a little longer before starting the mead brew.
I now have a secondary fermenter that will not see use for 5 or more weeks. This will not do. I am wondering if i want to get another primary, or if i just want to try a single stage. Either way I can get another beer bottled in about 3 weeks, instead of 7 or so.
Decisions, Decisions. And the bigger decision - which kit?
